Eat meat, vegetables, nuts and seeds, some fruit, little starch and no sugar. Those thirteen words form the foundation of the CrossFit nutrition program. It's that simple, eat things that you can grow, gather, hunt, and harvest. It's astonishing how quickly we can mess that up. 
I call eating 
meat, vegetables, nuts and seeds, some fruit, little starch and no sugar Paleo because I need a word to describe eating meat, vegetables, nuts and seeds, some fruit, little starch and no sugar without having to repeat eat meat, vegetables, nuts and seeds, some fruit, little starch and no sugar. You can see how having a simple word to describe this becomes useful. 
Eating Paleo, or the Paleo diet, is not about recreating what we ate 10,000 years ago. It's all about eating whole and unprocessed foods. Contrary to popular culture, Paleo does not mean eat all meat all the time. Remember the second food type in our nutrition program? Yes, vegetables. 
The majority of food we should be eating are vegetables. One of my favorite food and nutrition writers, Michael Pollan, puts it simply, "Eat Food. Not Too Much. Mostly Plants." Eat mostly plants. 
I counsel many people on diet and exercise and the most common nutrition problem is that most people don't eat enough vegetables. For many folks, the ONE vegetable they eat plentifully is the potato. I'm sorry, french fries don't count as vegetables. 
Vegetables are the above ground parts of plants that are green, yellow, orange, purple, etc. Vegetables have lots of fiber and phytonutrients. Vegetables are good for you and you need to eat more of them. 
Most people don't eat vegetables because they need to be chopped, sliced, and diced and many people feel cooking is just too much trouble. Go tell that to the Neanderthals and Cro-Magnon. 
​For today's Foodie Friday recipe I'm sharing one of my favorite ways to eat cabbage (which is available locally at farmer's markets) from one of my all time favorite food blogs, Well Fed. I have all three Well Fed cookbooks and every single recipe is delicious, vegetable heavy and easy to prepare. These roasted cabbage roses are an example of her simple Paleo genius. Enjoy them this weekend with Farm 51 goat chops and a nice bottle of Côte du Rhône.
