Running is on today's menu. Do you think we'll actually get outside today? After 9 years of living in Bozeman, It's about this time every year that I start missing my home state. Yes, I'm from California and I'm damn proud of it, too! You can't shame me. My dad worked at Folsom Prison and my mom was in the FFA. What I miss most is SPRING and great Mexican fusion food. I miss Spring because right now in the Golden state it looks like this while here in the Treasure state it looks like this. One of my very favorite places to eat Papas y Pollo is in the sleepy little town of Sebastapol. I used to go there all the time when I worked at the UC Davis Marine Biology Lab in Bodega Bay. Papas y Pollo serves the most AMAZING loaded sweet potatoes. Imagine a perfectly cooked sweet potato smothered in pulled pork or carne asada with all the fresh amazing salsas and guacamole you want. Of course, a local beer from nearby Lagunitas Brewery is the perfect accompaniment. I recently came across this recipe from PaleoRunningMama.com that does a decent stand-in for my beloved Papas y Pollo. These Paleo Chili Stuffed Sweet Potatoes are just the thing I need to get me out of my "Spring in Montana" funk. They pair quite nicely with any of the scotch ales from the 15 breweries in our area.
