Jon coaches an OHS and pull-up workout with a full house in the old space. Sometimes I wonder how we did all those workouts in 800sqft without anyone getting squished. This week in our Gallatin Valley Botanical veggie box we received lovage. Lovage is a tall perennial herb that was once used widely for its distinctive flavor and medicinal properties. It is easy to grow in Montana and its popularity is on the rise. You will likely see it in the farmers' markets. I found this great recipe using lovage, lettuce, peas and cucumbers all green vegetables that are in season now and available from local farmers. This refreshing and pretty summer soup recipe is from The Guardian and serves four. Enjoy! Lovage, lettuce, pea and cucumber soup Ingredients
Warm the butter in a large saucepan over a medium-low heat. Add the onion, thyme and a pinch of salt, and sauté until the onion is soft and translucent, about 10 minutes. Add the lovage stalks and sauté for a couple of minutes. Pour in the stock and simmer for 10 minutes. Add the rest of the vegetabes (keep back some lovage leaves to garnish) and simmer for five minutes.
